Bayou Stew

Ingredients

  • rice
  • 2/3 lb boneless chicken
  • 2 Tbsp margarine
  • 1 large onion, chopped
  • 1/2 lb smoked sausage
  • 1 bell pepper
  • 1 28oz containers beef broth
  • Slap ya Mama
  • 2 Tbsp flour

Preparation

Melt the margarine in the soup pot over medium, adding onions to the pot as you chop and cut the chicken, adding as you cut. Then raise to medium-high cook until the chicken is almost cooked.

Meanwhile cook rice according to directions on the box

Cut the sausage into 1/4-inch moons. Add the sausage to the pot. Cut the pepper into pieces. Add the broth to the pot, then the pepper and turn it to high and bring to a boil.

Add Slap ya Mama and cover, boil for about 3-4 minutes until the pepper is tender. Combine flour with 6 Tbsp water in measuring cup, whisk to remove all lumps. Gradually add to soup until it's thickened slightly.

Put rice in bowls and ladle soup over rice.
