Chicken Thighs with Caramelized Onion Dressing
INGREDIENTS
3 slices bacon, diced
3 large onions, halved and sliced
2 c ciabatta cubes, dried
1/2 c chicken broth
1 egg, lightly beaten
2 Tbsp parsley, snipped
1/4 tsp pepper
4 skinless boneless thighs
1 Tbsp EVOO
Snipped parsley for garnish
PREPARATION
Heat oven to 425
Cook bacon on medium about 10 minutes, till crisp.
Remove with slotted spoon to paper towel.
Reserve 2 Tbsp of drippings.
Add onions, turn heat to Medium Low
Cover, cook 15 minutes or until onions are tender, stirring occasioanlly.
Uncover, cook over medium-high 3-5 minutes, until golden.
Remove from heat.
In yellow bowl, combine bacon, onion, bread cubes, broth, egg, 2 Tbsp parsley and pepper.
Stir gently to combine.
DIvide among 4 coral oven-proof mugs, set aside
In the same skillet, cook chicken in EVOO over medium, about 5 minutes or until browned on both sides.
Place one thigh in each mug.
Bake, uncovered, 20-25 minutes or until stuffing reads 165.
Sprinkle with additional parsley if desired.
