Chicken Thighs with Caramelized Onion Dressing

INGREDIENTS

  • 3 slices bacon, diced
  • 3 large onions, halved and sliced
  • 2 c ciabatta cubes, dried
  • 1/2 c chicken broth
  • 1 egg, lightly beaten
  • 2 Tbsp parsley, snipped
  • 1/4 tsp pepper
  • 4 skinless boneless thighs
  • 1 Tbsp EVOO
  • Snipped parsley for garnish

PREPARATION

  1. Heat oven to 425
  2. Cook bacon on medium about 10 minutes, till crisp.
  3. Remove with slotted spoon to paper towel.
  4. Reserve 2 Tbsp of drippings.
  5. Add onions, turn heat to Medium Low
  6. Cover, cook 15 minutes or until onions are tender, stirring occasioanlly.
  7. Uncover, cook over medium-high 3-5 minutes, until golden.
  8. Remove from heat.
  9. In yellow bowl, combine bacon, onion, bread cubes, broth, egg, 2 Tbsp parsley and pepper.
  10. Stir gently to combine.
  11. DIvide among 4 coral oven-proof mugs, set aside
  12. In the same skillet, cook chicken in EVOO over medium, about 5 minutes or until browned on both sides.
  13. Place one thigh in each mug.
  14. Bake, uncovered, 20-25 minutes or until stuffing reads 165.
  15. Sprinkle with additional parsley if desired.
