---++ Chicken Thighs with Caramelized Onion Dressing ---+++ INGREDIENTS * 3 slices bacon, diced * 3 large onions, halved and sliced * 2 c ciabatta cubes, dried * 1/2 c chicken broth * 1 egg, lightly beaten * 2 Tbsp parsley, snipped * 1/4 tsp pepper * 4 skinless boneless thighs * 1 Tbsp EVOO * Snipped parsley for garnish ---+++ PREPARATION 1. Heat oven to 425 1. Cook bacon on medium about 10 minutes, till crisp. 1. Remove with slotted spoon to paper towel. 1. Reserve 2 Tbsp of drippings. 1. Add onions, turn heat to Medium Low 1. Cover, cook 15 minutes or until onions are tender, stirring occasioanlly. 1. Uncover, cook over medium-high 3-5 minutes, until golden. 1. Remove from heat. 1. In yellow bowl, combine bacon, onion, bread cubes, broth, egg, 2 Tbsp parsley and pepper. 1. Stir gently to combine. 1. DIvide among 4 coral oven-proof mugs, set aside 1. In the same skillet, cook chicken in EVOO over medium, about 5 minutes or until browned on both sides. 1. Place one thigh in each mug. 1.
