---++ Hawaiian Meatballs ---++++ Ingredients * 2 bunches scallions, cut into 1" pieces (about 1 c) * 2 tsp Vegetable oil * 2 medium carrots (about 1 c sliced) * 24 meatballs, defrosted if frozen * 1 c chicken broth * 1 can (20oz) pineapple chunks in syrup * 2 Tbsp red wine vinegar * 2 Tbsp soy sauce * 1 Tbsp ginger * 2 tsp garlic * 2 Tbsp cornstarch * 3 Tbsp cold water ---+++ Preparation 1 Heat the oil in the pan over medium heat and add the carrots. Cook 2 minutes. Add the meatballs, cook until the carrots are almost tender and the meatballs almost heated through, about 3 minutes 2 Add remaining ingredients except cornstarch and water. Raise heat to medium high and bring to a boil. 3 combine cornstarch and water, whisking or stirring to remove all lumps. Add to the pan and stir until thickened and bubbly.
