Lemon Basil Butter Chicken
INGREDIENTS
1.5 c stock or broth
3 Tbsp lemon juice
1 tsp basil
3 Tbsp cornstarch
2 Tbsp butter
8 chicken thighs
salt and pepper
2 cloves garlic, minced
PREPARATION
Heat oven to 425.
In 2 c glass measure, whisk broth, lemon juice, basil, and cornstarch until will blended.
Melt 1 Tbsp butter in lodge skillet, over medium-high heat.
Sprinkle chicken with salt and pepper.
Cook chicken 5-10 minutes, turning once, until brown. Transfer to plate.
Reduce heat to medium-low. In same skillet, melt remaining butter.
Stir in broth mixture and garlic; cook 3-5 minutes or until slightly thickened.
Return chicken to skillet.
Bake, uncovered, 15-20 minutes or until 165.
