Lemon Basil Butter Chicken

INGREDIENTS

  • 1.5 c stock or broth
  • 3 Tbsp lemon juice
  • 1 tsp basil
  • 3 Tbsp cornstarch
  • 2 Tbsp butter
  • 8 chicken thighs
  • salt and pepper
  • 2 cloves garlic, minced

PREPARATION

  1. Heat oven to 425.
  2. In 2 c glass measure, whisk broth, lemon juice, basil, and cornstarch until will blended.
  3. Melt 1 Tbsp butter in lodge skillet, over medium-high heat.
  4. Sprinkle chicken with salt and pepper.
  5. Cook chicken 5-10 minutes, turning once, until brown. Transfer to plate.
  6. Reduce heat to medium-low. In same skillet, melt remaining butter.
  7. Stir in broth mixture and garlic; cook 3-5 minutes or until slightly thickened.
  8. Return chicken to skillet.
  9. Bake, uncovered, 15-20 minutes or until 165.
