---++ Lemon Basil Butter Chicken ---+++ INGREDIENTS * 1.5 c stock or broth * 3 Tbsp lemon juice * 1 tsp basil * 3 Tbsp cornstarch * 2 Tbsp butter * 8 chicken thighs * salt and pepper * 2 cloves garlic, minced ---+++ PREPARATION 1. Heat oven to 425. 1. In 2 c glass measure, whisk broth, lemon juice, basil, and cornstarch until will blended. 1. Melt 1 Tbsp butter in lodge skillet, over medium-high heat. 1. Sprinkle chicken with salt and pepper. 1. Cook chicken 5-10 minutes, turning once, until brown. Transfer to plate. 1. Reduce heat to medium-low. In same skillet, melt remaining butter. 1. Stir in broth mixture and garlic; cook 3-5 minutes or until slightly thickened. 1. Return chicken to skillet. 1. Bake, uncovered, 15-20 minutes or until 165.
